Sweet and Spicy Slow Cooker Chicken Breasts
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup low-sodium soy sauce
- 1/3 cup honey
- 1/4 cup ketchup
- 3 cloves garlic, minced
- 1 tablespoon rice vinegar (or apple cider vinegar)
- 1 tablespoon sesame oil (optional)
- 1 to 2 teaspoons red pepper flakes (adjust to taste)
- 1 tablespoon cornstarch (optional, for thicker sauce)
- 1 tablespoon water (if using cornstarch)
Instructions
- Place the chicken breasts in the bottom of the slow cooker in a single layer.
- In a medium bowl, whisk together the soy sauce, honey, ketchup, garlic, rice vinegar, sesame oil, and red pepper flakes.
- If you prefer a thicker sauce, mix the cornstarch with 1 tablespoon of water until smooth, then whisk it into the sauce.
- Pour the sauce evenly over the chicken breasts.
- Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is fully cooked and tender.
- Remove the chicken and shred or slice as desired. If you would like the sauce thicker, transfer it to a saucepan and simmer over medium heat for 10 to 15 minutes until reduced.
- Return the chicken to the sauce and stir to coat before serving.
