These crispy fried rice balls are a great snack made with leftover rice, eggs, flour, and vegetables like peppers. They’re crunchy outside and soft inside.

Prepare the mixture

Mash slightly so the rice sticks together. If mixture is too wet, add a little more flour or breadcrumbs. -
Shape balls
Take small portions and roll into ping-pong sized balls. -
Coat (optional)
Roll balls in breadcrumbs for extra crunch. -
Fry
Heat oil to medium heat and deep fry for 3–4 minutes until golden brown. -
Drain
Remove and place on paper towels.
