4-Ingredient Spring Peas and Potatoes
Description
My grandpa survived on this hearty, humble dish during tough times, and he still asks for it every spring. Made with just four simple ingredients, it’s incredibly affordable, filling, and full of comfort.
Ingredients
- 4 medium potatoes, peeled and diced
- 2 cups green peas (fresh or frozen)
- 2 tablespoons butter
- Salt, to taste
Equipment
- Medium pot
- Knife
- Cutting board
- Colander
Instructions
- Place the diced potatoes in a pot and cover with water. Add a pinch of salt.
- Bring to a boil and cook until the potatoes are fork-tender, about 10–15 minutes.
- Add the peas during the last 3–5 minutes of cooking.
- Drain the water and return the potatoes and peas to the pot.
- Add butter and stir gently until melted and coated.
- Season with additional salt to taste and serve warm.
