Homemade Caramel Nut Clusters
Description
These caramel nut clusters combine toasted nuts with rich homemade caramel for a crisp, chewy treat. They are perfect for gifting or storing as a sweet snack.
Ingredients (Makes about 18 clusters)
- 2 cups mixed nuts (almonds, pecans, cashews, or peanuts)
- 1 cup granulated sugar
- 6 tablespoons unsalted butter, cubed
- 1/2 cup heavy cream, warmed
- 1/2 teaspoon salt (or 1 teaspoon flaky sea salt for salted caramel)
- 1/2 teaspoon vanilla extract
- Optional: 1 cup melted dark or milk chocolate for coating or drizzling
Equipment
- Heavy-bottom saucepan
- Wooden spoon or heatproof spatula
- Candy thermometer (recommended)
- Parchment paper
- Baking sheet
Instructions
Step 1: Toast the Nuts
Preheat oven to 350°F (175°C).
Spread nuts on a baking sheet and toast for 8–10 minutes until fragrant.
Remove and set aside.
Step 2: Make the Caramel
Place sugar in a heavy saucepan over medium heat.
Allow it to melt, stirring occasionally, until it turns a deep amber color.
Add butter carefully and stir until melted.
Slowly pour in the warm heavy cream while stirring. The mixture will bubble vigorously.
Cook until caramel reaches 240–245°F (soft-ball stage).
Remove from heat and stir in salt and vanilla extract.
Step 3: Combine
Stir toasted nuts into the caramel until fully coated.
Step 4: Form the Clusters
Drop spoonfuls of the mixture onto parchment paper.
Allow to cool completely at room temperature until firm.
Optional Chocolate Finish
Dip cooled clusters into melted chocolate or drizzle chocolate over the tops.
Let set until chocolate hardens.
Storage
Store in an airtight container at room temperature for up to 1 week.
For longer storage, refrigerate up to 3 weeks.
Tips for Success
- Use a light-colored saucepan to better monitor caramel color.
- Do not stir sugar constantly while melting to prevent crystallization.
- Work quickly once nuts are added, as caramel sets fast.
- If caramel hardens too quickly, gently reheat over low heat.
